Strawberry Spinach Salad with Sweet Poppy Seed Dressing

If you've been wanting a salad that's so good you crave it....this is one's for you!

The salad its self is so simple. Every ingredient is added for a specific reason and it's just what's needed. Fresh strawberries for irreplaceable sweetness, cucumber for a light crunch, and avocado for their creamy goodness.

Regardless of the dressing, this combo will make your taste buds dance. It's like rays of sunshine beaming on your face. You can't get enough.

To top it all off though, I have a fabulous Poppy Seed Dressing for you! No joke, it's my favorite dressing yet. It may quickly turn into a staple in your fridge, too.


Strawberry Spinach Salad with Sweet Poppy Seed Dressing

Makes 4 servings | Ready in 15 minutes | Stores 3 days in fridge (dressing kept separate)

 

SALAD INGREDIENTS

  • 1 lb fresh spinach, chopped
  • 1 lb strawberries, thinly sliced
  • 1 large cucumber, thinly sliced
  • 1 avocado, diced
  • ½ recipe Sweet Poppy Seed Dressing (below)

DRESSING INGREDIENTS

  • ¾ cup cashews, soaked for 1 hour and strained
  • ¾ cup aquababa (liquid from 14 oz can of chickpeas) or water
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons water
  • 2 tablespoons chopped white onion (½ oz)
  • 4 Medjool dates, pitted
  • ½ teaspoon ground dry mustard
  • 1 tablespoon poppy seeds

DIRECTIONS

  1. Add all of the dressing ingredients except for the poppy seeds to a high-powered blender. Blend until smooth and creamy.
  2. Pour the dressing into the container you want to store it in. Add the poppy seeds and stir them in. Set in the refrigerator to chill until serving.
  3. Add spinach to individual salad plates. Top with strawberries, cucumber, and avocado.
  4. Drizzle poppy seed dressing over each salad.
