Makes 4 servings | Ready in 20 minutes | Stores 1 week in fridge
INGREDIENTS
- ½ yellow onion, minced (about 3 oz)
- 4 garlic cloves, minced (1 teaspoon garlic granules)
- 3 tablespoons sun-dried tomatoes (preferably oil-free), minced
- 1 tablespoon dried oregano (2 tablespoons fresh)
- 1 tablespoon dried basil (3 tablespoons fresh)
- 1 teaspoon dried thyme (1 tablespoon fresh)
- 6 oz tomato paste, no salt added
- 1 cup water
- ¼ teaspoon ground black pepper
DIRECTIONS
- In a large sauté pan over medium heat, add onions and cover with a lid. Cook for a couple minutes, stirring occasionally. Add garlic and sun-dried tomatoes and cook for a few more minutes.
- Now add in dried herbs, tomato paste, and water. Use a whisk or wooden spoon to mix everything, specifically the tomato paste and water. Reduce the heat to low-medium and simmer the sauce for 10 to 15 minutes.
- If using fresh herbs add them shortly before the sauce is done to preserve their flavor. Add black pepper to taste. Use right away, or pour into a jar to cool and store in the fridge for a week.
